Julia and Libby's - Mushroom "Tacos" with fresh Salsa

- Salsa
- 3 ripe tomatoes, finely diced
- 1/2 red onion, finely diced
- 2 cloves of garlic, finely diced
- 1/2 cup fresh flat leaf parsley, finely chopped
- 1 red chilli, finely diced and seeds removed.
- 1/2 red capsicum, finely diced
- Juice of 1 lime
- 2 tablespoon extra virgin olive oil
- salt and pepper to season
- Filling
- 2 cups walnuts
- 2 tablespoon Tamari
- 1/2 teaspoon Cumin powder
- 1 teaspoon chilli powder
- 1 teaspoon smoked Paprika
- 2 cups Meadow's brown button mushrooms, sliced
- 1 tablespoon coconut oil
Method
- Firstly make the salsa - place all ingredients into a bowl and combine. Set aside.
- Place the walnuts, tamari, cumin & chilli powders and paprika into a food processor and pulse until mixture is crumbly and resembles mince.
- Heat a pan over medium heat, add walnut mixture in a pan with mushrooms and coconut oil. Cook for 5 to 7 minutes. Remove from heat and place into a bowl.
- Break apart cos lettuce pieces and wash under water. Dry off with a paper towel and place into a bowl.
- Build tacos by using the lettuce leaves as a taco, fill with the mushroom and walnut mixture at the bottom, then top with the salsa.
