Great Taste Without The Salt
With less than 5mg of salt in a 100 g serve, mushrooms are naturally low in sodium and high in potassium: a combination that’s important for good health. But don’t let the low salt fool you - mushrooms are still high in taste, with a rich, earthy taste that makes them an ideal addition to any meal.
In fact, the unique ‘umami’ flavour of mushrooms can actually be used to replace some of the salt used in recipes. Much of the umami flavour comes from mushrooms’ natural glutamates, which increase as they mature from a button to a flat mushroom (that’s why Portabellos have more flavour than small button mushrooms). When food has extra glutamate, its salt content can be reduced by 30-40%.
