Al Brown's Portabello Mushroom Burgers with Caramelised Onion & Blue Cheese

SERVES: 6

  • 750gm Meadows Portabello Mushrooms (whole)
  • 100gms butter (for onions)
  • 150gms butter (for mushrooms)
  • ¼ cup cooking pil
  • 700gms onion (thinly sliced)
  • 1 Tbl fresh Rosemary (finely chopped)
  • 2 Tbl balsamic vinegar
  • ¼ cup brown sugar
  • Sea salt & fresh black pepper
  • ½ Tbl garlic (finely chopped)
  • 200gms blue cheese (crumbled)
  • 6 hamburger buns
  • Rocket (one bag)

Method

  1. Caramelise onions - put butter, oil, onion & rosemary into a large saucepan over a medium low heat & cook 30 mins until golden.
  2. Add balsamic & brown sugar cook another 5 min.
  3. Season with salt & pepper remove from heat & keep warm.
  4. Peel mushrooms.
  5. Melt butter with garlic & brush mushrooms before placing on hot grill.
  6. Cook 10 mins, basting with remaining garlic butter until soft & cooked through.
  7. Sprinkle a little blue cheese over mushrooms.
  8. Warm buns on the grill.
  9. Add rocket leaves to bun bases; add warmed caramelised onions, top with mushrooms. Put bun lids on & devour immediately.
