Pork & Mushroom Dumpling with Chilli Dipping Sauce

  • 200g Swiss Brown Meadow Mushrooms
  • 400g Pork Mince
  • 4 Makrut Lime leaves, vein removed, finely sliced OR an extra ¼ cup coriander
  • ½ cup coriander, finely sliced
  • 1 small shallot or ½ onion, finely diced
  • ½ teaspoon salt
  • 3 Tbsp hoisin sauce
  • 1 pkt dumpling wrappers
  • Oil for frying, low flavour
  • To serve (optional): red chilli, coriander, spring onion,toasted sesame seeds
  • Dipping Sauce
  • ¼ cup Sweet Chilli Sauce
  • ¼ cup Balsamic Vinegar
  • 2 Tbsp Soy Sauce

Method

  1. Wipe mushrooms clean with a paper towel or pastry brush. Finely dice mushrooms by hand, or in a food processor on low. Careful not to over-process to a mush.
  2. In a medium sized bowl, mix all your dumpling ingredients together.
  3. Before assembling dumplings, take a teaspoon of dumpling mix and cook in the microwave or fry in a pan to taste for seasoning. Adjust by adding more salt if needed.
  4. Place 4 dumpling wrappers on a board and spoon around 1 teaspoon of filling in the middle. Wet the edge with a little water, just half the way around, then push together using your fingers. Place on baking paper. Repeat until finished.
  5. Add 1 teaspoon of oil to a non-stick pan over a med – high heat. Once hot add 8-10 dumplings, careful not to over crowd the pan.
  6. Add ¾ cup of water to the pan and place a lid on top. Cook until all the water has evaporated and they have a nice brown bottom.
  7. While the dumplings are cooking, make the dipping sauce by mixing all ingredients together well.
  8. To serve, pour the sauce on the bottom of the serving dish, add the dumplings. If using, scatter with herbs, spring onion, chilli and sesame seeds.

Top Tips:

  • Makrut Lime leaves are available in the Produce section of some supermarkets or frozen section of Asian supermarkets
  • The dipping sauce makes a large amount, you can also halve the recipe
  • Make a batch and freeze for later for unexpected guests or those nights when you don't feel like cooking
