
Pork & Mushroom Dumpling with Chilli Dipping Sauce

- 200g Swiss Brown Meadow Mushrooms
- 400g Pork Mince
- 4 Makrut Lime leaves, vein removed, finely sliced OR an extra ¼ cup coriander
- ½ cup coriander, finely sliced
- 1 small shallot or ½ onion, finely diced
- ½ teaspoon salt
- 3 Tbsp hoisin sauce
- 1 pkt dumpling wrappers
- Oil for frying, low flavour
- To serve (optional): red chilli, coriander, spring onion,toasted sesame seeds
- Dipping Sauce
- ¼ cup Sweet Chilli Sauce
- ¼ cup Balsamic Vinegar
- 2 Tbsp Soy Sauce
Method
- Wipe mushrooms clean with a paper towel or pastry brush. Finely dice mushrooms by hand, or in a food processor on low. Careful not to over-process to a mush.
- In a medium sized bowl, mix all your dumpling ingredients together.
- Before assembling dumplings, take a teaspoon of dumpling mix and cook in the microwave or fry in a pan to taste for seasoning. Adjust by adding more salt if needed.
- Place 4 dumpling wrappers on a board and spoon around 1 teaspoon of filling in the middle. Wet the edge with a little water, just half the way around, then push together using your fingers. Place on baking paper. Repeat until finished.
- Add 1 teaspoon of oil to a non-stick pan over a med – high heat. Once hot add 8-10 dumplings, careful not to over crowd the pan.
- Add ¾ cup of water to the pan and place a lid on top. Cook until all the water has evaporated and they have a nice brown bottom.
- While the dumplings are cooking, make the dipping sauce by mixing all ingredients together well.
- To serve, pour the sauce on the bottom of the serving dish, add the dumplings. If using, scatter with herbs, spring onion, chilli and sesame seeds.
Top Tips:
- Makrut Lime leaves are available in the Produce section of some supermarkets or frozen section of Asian supermarkets
- The dipping sauce makes a large amount, you can also halve the recipe
- Make a batch and freeze for later for unexpected guests or those nights when you don't feel like cooking
