Toasted mushroom & Tomato sandwiches

- 1 1/2 tbs butter
- 300g White or Swiss brown button mushrooms, sliced
- Salt & ground black pepper
- 100g baby spinach leaves (optional)
- 1/2 cup sundried tomatoes, chopped
- 3/4 cup grated cheddar cheese
- 4 Turkish or Pannini bread rolls, halved
Method
- Melt butter in a medium-high heat.
- Add mushrooms and cook, stirring occasionally, for 3 minutes or until soft.
- Drain on paper towel.
- Season with salt and pepper.
- Preheat a grill or sandwich toaster on medium-high.
- Arrange spinach leave, mushrooms, sundried tomatoes and cheese evenly on the bread roll bases.
- Season with salt and pepper.
- Top with remaining bread and press down firmly.
- Place sandwiches under the grill or sandwich toaster and cook for 4-5 minutes on each side or until toasted.
- Cut in half and serve.
